Ice cream is my favorite food.

I’ve never had a flavor I didn’t like, and I’ve never gone a day that it sounded bad.

Unfortunately, I can’t eat it everyday. Although I’d really like to!

I actually eat pretty healthy on a regular basis, so I thought I’d share some of my favorite easy, healthy recipes for you all to try!

Almost every Sunday I make a trip to the grocery store and prep my meals and snacks for the week. I know that sounds like a boat load of work but it really doesn’t have to be at all!

I typically have a smoothie or oatmeal for breakfast, and I like to snack on raw veggies or cottage cheese throughout the day. I try to keep my snacks lower in calories so they aren’t really all too exciting, but will 100% eat the donuts in the kitchen at work if they’re in front of me.

Balance people, balance.

Anyways, here are some of my go to’s during the week that help me stay on track!

Mexican Stir Fry (It’s not really called that but I made this one up and don’t have a name for it lol)

Ingredients

Steamfresh Frozen Southwestern Style Protein Blend (Probably any veggie blend would do but this gives some really yummy flavor!)

1lb Bag of Small Frozen Shrimp

La Tortilla Factory Cocina Fresca Al Pastor Skillet Sauce Starter

1 Box of Zatarain’s Cilantro Lime Rice

Instructions

– Cook the rice per box directions.

– Thaw the shrimp and toss it in a pan on medium heat, add about 3 Tbsp of the sauce (give or take a little depending on how much spice you like)

– Cook the frozen Protein Blend per bag instructions.

– Combine the cooked rice, cooked bag of Protein Blend mix, and shrimp with sauce into a large mixing bowl. Stir to combine and serve hot. (Usually makes 4 lunches for me)

Buffalo Turkey Meatballs

Ingredients – makes about 25 meatballs

1 lb. ground turkey (at least 90% lean)

1 onion, minced

2/3 cup carrots, minced

2/3 cup celery, minced

1 Tbsp. onion powder

1 Tbsp. garlic powder

½ tsp. salt

pepper to taste

½ Tbsp. season salt

1 egg

1 sleeve of Ritz crackers crumbled (or use bread crumbs)

Franks Hot Sauce

Ranch for dipping (skinny ranch instructions at bottom of instructions)

Instructions

– Preheat oven to 400 degrees. Line baking sheet with foil and lightly coat with cooking spray

– Place all the ingredients in a bowl and kneed together with clean hands. Form into bite size meatballs (I make them about the size of a ping pong ball…you don’t want them too big or the meatball to sauce ratio is off lol.

– Place meatballs onto baking sheet and bake until cooked through (about 16-18 min)

– Remove from the oven and place meatballs in a bowl. Add about ½ cup of Franks Hot Sauce and gently toss to coat the meatballs

– Serve with ranch dipping sauce

– For a healthier ranch sauce, buy the Ranch Seasoning packet and mix it into a cup of plain greek yogurt. It’ll be a bit thicker than typical ranch so add nonfat milk until it reaches the consistency of your liking. (Only add a tiny bit at a time)

One Pan Chicken Breast Dinner

Ingredients

1 lb. boneless skinless chicken breast

5 Tbsp. Zesty Italian dressing

2-3 bell peppers, sliced (any color you like)

salt, pepper to taste

Instructions

– Heat a large frying pan on medium. Lightly coat in cooking spray.

– Add salt, pepper to chicken

– Brown chicken breasts in the pan.

– Add a tablespoon of Zesty Italian dressing on top of each chicken breast.

– Add bell peppers and place remaining Zesty Italian on top of the peppers. I like to keep the chicken breasts in the center of the pan and surround the peppers around the outside.

– Cook chicken through to center.

– Remove chicken and toss peppers in the pan until they reach the tenderness of your liking.

– Serve hot!

Protein Balls

Ingredients

2/3 cup creamy peanut butter

½ cup semi-sweet chocolate chips

1 cup old-fashioned oats

½ cup ground flax seeds

2 Tbsp. honey

1 scoop vanilla protein

Instructions

– Place all ingredients in a large mixing bowl and combine with clean hands

– Refrigerate for 15-20 minutes

– Roll mixture into bite size balls and enjoy!

– Store leftovers in the fridge

Turkey Burgers

Ingredients – yields about 7 patties

1 lb. ground turkey (at least 95% lean)

1 onion, minced

2/3 cup carrots, minced

2/3 cup celery, minced

1 Tbsp. onion powder

1 Tbsp. garlic powder

½ tsp. salt

pepper to taste

½ Tbsp. season salt

1 egg

1 sleeve of Ritz crackers crumbled (or use bread crumbs)

Instructions

– Place all the ingredients in a bowl and kneed together with clean hands

– Heat a pan on the stove on medium (lightly coat with cooking spray – or grill)

– Form meat into patties.

– Place patties into pan and cook for about 5-7 minutes.

– Remove from heat and serve with toppings of your choice. I usually toast the inside of the buns on the pan after the burgers are done!

I like mine with lettuce and tomato…Heinz 57 and French fry potatoes…lol okay sorry that was for my dad. He always sings that song, I couldn’t resist haha.

I actually like mine with lettuce, tomato, ketchup, and pickles!

But you can doctor them up however you choose!
